Carrot Salad with Roasted Chickpeas

This was an accidental success!

In a method of trying to use what I had in the pantry and fridge I stumbled across this gem!

I originally posted a version of the carrot salad to my social media where I talked about this salads superpower of regualting hormones within the body while providing many nutrients!

We all know the power of carrots, or at least we know they are good for our eyes. But they alsobalance your blood sugar, lower your risk of cancer, regulate blood pressure, reduce heart disease, improve immunity, and boost brain health.

They are also an excellent source of vitamin A, and are a fair source of B vitamins, like niacin and B6, which help our bodies use energy from foods.

This salad is pretty satisfying and perfect for the end of summer season!

As always get creative and use this recipe as a guide, but make it your own and use what you have!

Ingredients: Carrot Salad

  • 5 large carrots peeled very thinly sliced

  • 1/4 cup vinegar or lemon juice

  • 1/2 small thinly sliced onion

  • 2 small cloves garlic minced

  • 2 tablespoons olive oil

  • 1 tbs seseme seeds (optional)

  • 1 tsp fresh thyme

  • Sea salt and pepper to taste

  • Feta cheese (optional for topping)

Ingredients: Roasted Chickpeas

  • 1 can chick peas rinsed

  • 2-3 tbs olive oil

  • 1 1/2 tsp sea salt

  • 1/2 tsp pepper

  • 1/2 tsp garlic powder or 1 clove fresh garlic

Directions:

Preheat the oven at 375 degrees F

In a bowl toss together chickpeas, oil, salt, pepper, and garlic and mix until fully coated.

Bake in oven for 30-35 minutes tossing the chickpeas with a spatula halfway through.

While they bake, in the same bowl toss together your shaved carrot, vinegar, onion, garlic, oil, thyme, salt, sesame seeds, and pepper.

Once chickpeas are cooked let them cool for 5-10 minutes so they get nice and crunchy!

Finally assemble the salad in whatever way speaks to your heart! I like to do the carrot salad, chickpeas, and then feta cheese on top.

Perfect simple salad for busy nights! Not to mention this salad gets better the longer it sits.
