Egg and Cheese Breakfast Sandwich
This breakfast staple has made many appearances in my childhood growing up. This sandwich is perfect for busy mornings, and you can freeze them ahead of time!
I grew up watching my dad make these all the time, but I could never understand the obsession. Now that I am older and have to make healthy and easy breakfasts for myself, I get it. To me this sandwich is comfort food. It’s a great way to start your morning, and you can eat it on your way to school or work!
I made this recipe using english muffins, but if you don’t have them that’s okay! Any kind of bread will do!
Ingredients:
Whole grain english muffin
1 egg
1 slice cheddar cheese
Avocado slices
Spices of choice (I use garlic salt, pepper, and red pepper flakes)
Hot sauce (optional)
Directions:
In frying pan cook egg to your liking, I usually go with over easy. I usually put the cheese on the egg right before its completely done cooking to get all the glorious cheesiness. Toast your english muffin (or bread) in the toaster and add butter if you wish. From here you assemble your sandwich! I usually like to put the avocado under the egg so it stays in place. Top with hot sauce and enjoy!
These should last in the freezer for 1-2 months
