Shakshuka
This recipe is here to mix up your breakfast.
The word Shakshuka quite literally translates to “mixed up”, and is a recipe that comes from North Africa. Shakshuka can be made for breakfast, lunch, or dinner. It is also extremely satisfying and simple to make!
The main base of this recipe is tomatoes, peppers, and onions with a mix of lovely spices.
The other star of this show is the eggs, which I was given at the local farmers market near Sedona Arizona. I was raised with chickens and my parernts still have them to this day. I will be honest that I do not eat eggs unless I know exactly where they are coming from. Fun Fact: My dad plays jazz and classical music in the coop for them on the radio and they love it!
If you are not a fan of eggs there are other alternatives. Whether that be tofu, “Just Egg” brand, beans, or hummus!
I think the no brainer for this recipe is the bread, whether it’s gluten free or regular it really brings everything together! Plus who doesn't love carbs ;)

Ingredients:
1 28 oz can whole tomatoes
1 red pepper diced
1 medium onion diced
3 tbs olive oil
4-5 cloves garlic
1 1/4 tsp paprika
1 tsp cumin
1/2 tsp chili powder
Salt to taste (I used 1 1/2 tsp salt)
1 tsp crushed black pepper
1/2 tsp red pepper flakes (optional but we love spice here)
6-8 eggs
Bread of choice
Optional toppings: feta, cilantro, parsley, basil, chives or hot sauce
Directions:
In a large pan over low-medium heat sauté onions and peppers with olive oil. When onions turn translucent (3-5 minutes) add in garlic and spices and cook for another few minutes.
Pour over canned whole tomatoes and smash down gently with back of spoon. Mix together and let simmer over medium heat for 5-10 minutes.
Next with the same spoon make little wells or holes in the mixture for you to put the eggs in. One the eggs are put into the holes cover with a lid and cook on low heat for 10-15 minutes, or until the eggs are cooked to your liking. Cooking the eggs in the shakshuka gives them a nice and creamy poached effect
Now plate it up! In a bowl with your shakshuka top with toppings of choice and add your toast. Such a delicious and comforting meal!
