Vegan Banana Bread
Banana Bread is my comfort food :)
I am always looking for healthy(er) baked good recipes and this one takes many wins in my book!
I have loved using coconut sugar when baking recently because it contains potassium, magnesium, and sodium, which are all essential for regulating your body's water content as well as many heart, nerve, and muscle functions. Not to mention it has a lower glycemic index.
A couple things to note for this recipe: I know the lemon juice seems strange but it adds such a unique flavor! I also want to add that toasting the walnuts is optional- but I think it is extra delicious.

Ingredients:
3 ripe bananas mashed
1 flax Egg = 2 tbs flax seed + 4 tbs water + 3 tsp lemon juice (stir and let sit for a few minutes to thicken)
1/2 cup melted butter or coconut oil
3/4 cup coconut sugar or brown sugar
1/2-3/4 cup non dairy milk (I used almond) See Directions
1 tsp vanilla
1 3/4 cup flour
1/3 cup almond flour
1 1/2 tsp baking powder
1 tsp baking soda
1/2 tsp salt
1 tsp cinnamon
1 small pinch of ground nutmeg
3/4 cup toasted walnuts
1/2 cup Chocolate chips
Directions:
Preheat oven to 350 F
While your oven is preheating in the same loaf pan you’ll be using for the bread place your walnuts in an even layer and bake for 10 minutes while the oven heats up.
Remove and allow to cool. Once cooled grease the loaf pan to prepare for the batter.
In a large mixing bowl combine your wet ingredients: mashed bananas, melted butter/oil, flax seed mixture, almond milk, sugar, and vanilla. Mix well
Add in the remaining ingredients: flour, almond flour, cinnamon, nutmeg, baking powder, baking soda, salt, walnuts and chocolate chips.
Mix until thick batter is formed (should be a little bit thicker than cake batter, start with 1/2 cup then add more if needed ).
Pour batter into greased loaf pan and place in oven.
Bake for 40-45 minutes or until a toothpick comes out clean.
