Pumpkin Bread with Pecan Streusel
Fall has officially arrived, and that means pumpkin season is upon us.
Ya’ll….I would give this recipe 10,000,000 thumbs up if I could, it is so delicious. Not to mention easy and it comes together quickly!
I am back home in Indiana visiting family right now and every time I do my mom asks me to cook for her. Somehow I came up with this recipe within 20 minutes using items from our pantry, baked it, and hoped for the best.
And boy oh boy did it deliver. I fear this creation will become a new obsession- which means I will need to be more frequent with my gym sessions. Everything in moderation! :)

Preheat: 350 degrees
Bake time: 35-50 minutes
Ingredients:
1 1/4 cup canned pumpkin puree (not pumpkin pie filling)
1 cup brown sugar or coconut sugar
1/2 cup milk + 1 tsp vinegar (white or apple cider)
1/2 cup olive oil or coconut oil (melted)
2 cups all purpose flour +1/4 if too runny (I like to use the King Arthur brand)
2 1/2 tsp baking powder
1 tbs pumpkin spice
1 tsp cinnamon
1/2 tsp salt
1 tsp vanilla
1/2 chocolate chips (optional)
Streusel topping:
2 tbs brown sugar
3 tbs oats
1 1/2 tbs olive oil, coconut oil, or melted butter
1/2 tsp cinnamon
2 tbs pecans (walnuts will work as well)
1/4 tsp salt
Directions:
Preheat oven to 350 degrees.
In a large mixing bowl combine pumpkin puree, sugar, milk vinegar mixture, oil, and vanilla. Mix with spatula until well incorporated.
To the wet ingredients add your flour, baking powder, pumpkin spice, cinnamon, and salt. Mix until combined. If adding chocolate chips fold them in here
The batter should not be too runny, but also not too thick to where it is hard to mix- think happy medium.
For the streusel topping combine sugar, oats, oil, cinnamon, nuts, and salt in a small bowl and mix together with your fingers until a crumble forms.
Next, in a greased loaf pan pour in your batter and spread out evenly. Then sprinkle over the streusel topping.
Place in oven and bake for 35-50 minutes, or until a toothpick comes out clean!
