Coconut Walnut Breakfast Cookies
I have recently bought walnuts in bulk and I am recipe testing like crazy!
I have finally posted my recipe for Walnut Milk which can be found below this recipe!
I had found myself with quite a bit of walnut pulp, and I was not quite sure what to do with it. I created this recipe to help use up the leftover pulp, and the next morning I ended up breaking the cookies up and heating them up in a pan until the bits got nice and crispy. I used some of the fresh walnut milk I had in the fridge and ate it like cereal!
So this is a breakfast cookie/cereal recipe. Either way this provides a breakfast or snack that is packed with omega-3s and brain food to help power your day.
Ingredients:
1 cup walnut pulp (squeeze out access liquid)
1 cup shredded coconut
1/3 cup maple syrup or honey
1 flax egg (2 tbs ground flax seed with 2 tbs water)
1/2 cup dark chocolate chips
Directions:
Preheat oven to 350 degrees
Mix all ingredients together in bowl until well combined. Use spoon to drop onto greased cookie sheet and shape into round cookie form. Bake for 20 minutes. Let cool before serving, or not.
