Blueberry Walnut Baked Oatmeal

I introduce to you a fun new way to enjoy oatmeal! This high protein baked oatmeal is a twist from the classic stove top breakfast. If you really use your imagination it’s almost like you’re having cake for breakfast.

I have been testing this recipe for a few weeks now and I have finally found one worthy enough to be on the internet. I love making breakfasts that are healthier and provide more energy, while also not making you feel like you’re eating a cheat meal.

This recipe only has two tablespoons of sugar which is a perfect amount, especially if you’re adding fruit. I like to add some greek yogurt to each serving, but you could add whipped cream if you really would like to wow a crowd.

I have used blueberries, bananas, and sautéed apple in this oatmeal. You could use fresh blueberries, strawberries, or bananas, but I highly recommend sautéing diced apples in coconut oil and brown sugar if you’re up for a little extra work!

Oven Preheat: 350 degrees

Bake: 25-30 minutes

Ingredients:

  • 3 cups oats

  • 1 1/2 teaspoons cinnamon

  • 2 large eggs (can sub flax eggs, 3 instead of 2)

  • 2 cups milk (I use coconut for this recipe)

  • 1 teaspoon baking powder

  • 1/2 teaspoon salt

  • 1/4 teaspoon nutmeg

  • 1 teaspoon vanilla

  • 2 tablespoons coconut oil

  • 2 tablespoons ground flax seeds (omit if using flax eggs)

  • 1/4 cup coconut sugar (or sweetener substitute)

  • 1/2 cup chopped walnuts (optional)

  • Fruit of choice: 1 cup of blueberries, diced apples, bananas, or strawberries

Directions:

Grease a small baking pan and set aside. You can use an 8x8” pan for a thick oatmeal, or a 13x9” pan for thinner oatmeal.

In a large bowl mix oats, cinnamon, baking powder, salt, nutmeg, flaxseeds, brown sugar and place in greased baking dish.

In smaller bowl whisk eggs, milk, coconut oil, and vanilla together.

Pour egg mixture over oats and slightly mix with spoon so that all oats are coated.

If using fruit and walnuts sprinkle over the top of oats here.

Place in preheated oven and bake for 25-30 minutes or until oats bounce back to the touch.

Once out of the oven add toppings listed below!

Toppings:

  • Greek yogurt

  • Honey

  • Whipped cream

  • Cinnamon
