Pumpkin Bran Muffins

Head into fall with these healthy pumpkin muffins! This quick and easy one-bowl mix is sure to be a crowd pleaser!

In honor of fall making her way back to us, I created this recipe using canned pumpkin and bran cereal! I wanted to make this recipe as easy as possible so I dumped everything into one bowl, and success! Baking should be simple, and I understand it can get overwhelming having bowls everywhere. One bowl means less mess, which means less time cleaning and more time enjoying down time. Take a nature walk, get a pumpkin spice latte, or both!

I hope you give this recipe a try, and tell me what you think! As always substitutions are totally fine, and in fact encouraged! Use what you have :)

Ingredients:

  • 1 can pumpkin puree

  • 1/4 cup coconut oil

  • 1/4 cup brown sugar

  • 1/4 cup granulated sugar

  • 1/2 tsp vanilla

  • 2 lightly beaten eggs

  • 3/4 cup milk of choice (I used coconut for this recipe)

  • 1 cup bran flakes (Raisin Bran is perfect!)

  • 1 1/4 cup flour

  • 1 1/4 tsp cinnamon

  • 1/4 tsp nutmeg

  • 1 1/2 tsp baking soda

  • 1 tsp baking powder

  • 1/2 tsp salt

  • Granola for topping (optional)

Directions:

Preheat oven to 375 degrees.

In a large mixing bowl start by adding the wet ingredients together. This will be pumpkin, oil, sugars, vanilla, and eggs (reserve milk for the end). Wisk until well incorporated. In same bowl add flour, bran flakes, cinnamon, nutmeg, baking powder, baking soda, and salt. Mix dry ingredients with wet ingredients until well incorporated. Add milk and mix well, but do not over stir as you will have dense muffins!

Spray muffin pan with oil, and fill batter 3/4 of the way. I have found that not using muffin liners gives the muffins a nice browned outside, but if you would like to use muffin liners that is totally fine! Once pan is filled with batter, top with granola.

Bake for 12-15 minutes, or until toothpick comes out clean.
