Peppermint Patties
My take on the nostalgic peppermint patties from our childhood.
I have been on a journey to remake my classic favorite foods throughout these last few years. I live a pretty plant based diet aside from some cheese every now and then.
My goal is to share easy, healthier, and budget friendly recipes with others that also share a love of food.
These peppermint patties remind me of Christmas and winters at being home. Which, seems odd to make them at the tail end of the summer season but fall is right around the corner!
I have been testing recipes that are made with fresh ingredients that many people have access to, while excluding the additives.
This recipe is so easy and simple I make it all the time and give them away as gifts! Do not be surprised if I repost this closer to Christmas time.

Ingredients:
3 cups powdered sugar
2 tsp peppermint extract
1 1/2 tbs coconut oil melted
2 tbs vegan butter melted
3 tbs water
1 1/2 cups dark chocolate chips
Directions:
Place all ingredients aside from dark chocolate in a bowl and mix well until it forms a ball.
Now with your hands shape into little patties and place on parchment paper.
Freeze for 15-20 minutes.
While they sit in the freezer, melt down chocolate using the double boiler method and set aside.
Dip patties into melted chocolate using two forks and allow to harden again in the freezer before storing. (Best storage method is air tight container stored in the fridge or freezer)

You can also do 3 1/2 tbs of coconut oil if you do not want to use the butter, but from my experience the butter helps solidify the patties and makes it easier to dip into the chocolate! But still delicious :)
