Thai Cucumber Salad
This salty and crunchy cucumber salad with Thai flavors is an absolute win. Eat it by itself or pair it with your favorite Thai dish!
It is safe to say that Thai food completely has my heart. If there is one cuisine I could eat forever and never stop it would be Thai food. My dream is to travel to Thailand and learn from the masters, but that is a story for another time.
Yum Nua is a Thai salad that originally is made with beef and lettuce, but I came up with a slightly different version that still captures all the main flavors. Now this recipe does use fish sauce as I was unable to find an alternative, so for my vegan friends I recommend using a substitute!
This recipe can be made in under 30 minutes and will taste good the next day. As I always say get creative and see what flavors taste good to you. Don’t forget to show me your creations!

Ingredients:
3 English cucumbers sliced into half moons
1/2 small red onion thinly sliced
2 garlic cloves minced
2 Thai chiles thinly sliced
I cup chopped fresh cilantro
Juice of 1 large lime
1 tbs fish sauce
1 tbs olive oil
1 tbs sesame oil
1 tsp salt
1/2 tsp sugar
2 tsp sesame seeds (optional)
Crushed peanuts
Directions:
Take rinsed off cucumbers and peel a few sides, but peeling is optional! Cut each cucumber in half long ways and then slice the cucumbers into half moon shapes as seen above. Place cucumbers in mixing bowl.
In bowl with cucumbers add minced garlic, chiles, red onion, cilantro, lime juice, fish sauce, olive oil, sesame oil, salt, sugar, and sesame seeds.
Mix well with spoon or spatula.
Set aside for 15 minutes to let marinate.
Top with crushed peanuts, serve, and enjoy!
