Peanut Butter Chickpea Curry
This one is for my peanut butter lovers! You’re probably wondering, spicy curry with peanut butter?Don't let the name throw you off, this curry deserves a gold metal!
I was also skeptical about this recipe at first, but I have to try everything at least once. All I can say is WOW. I was expecting the peanut butter to overpower the curry flavors, but boy was I wrong. The peanut butter adds an elevated creamy flavor that almost cools the spiciness of the Thai chilis.
This recipe is vegan and packed with protein! Asian cuisine is my favorite to make because the food is so rich and flavorful that you don’t even realize there is no meat in it. I highly recommend you make this recipe and get creative! Add in vegetables you have in you fridge or even chicken for my meat eaters! I hope you give this recipe a try!

Ingredients:
2 cups brown rice, cooked to package directions
1 red onion diced
3 garlic cloves minced
1/2 red Thai chili thinly sliced
2 tbs tomato puree
1 tbs grated ginger
2 cans chickpeas drained and rinsed
1 can coconut milk
2 cups kale (optional)
1/4 cup broth, and add more if too thick
3 tbs peanut butter
1 tsp paprika
1/2 tsp coriander
1 tsp curry powder
pinch of chili flakes
salt and pepper to taste
Juice of 1/2 a lime
Directions:
In large pot over medium heat add a few tablespoons of oil and sauté onions until soft (5-7 minutes).
Add in garlic, ginger, Thai chilis, tomato puree, and spices.
Let spices cook down for about 3 minutes.
Add in chick peas and broth.
Once chick peas heat up add in the coconut milk. If adding kale do so here and cover with tight fitting lid.
Stir occasionally for 5 minutes.
Add in peanut butter and stir until combined.
Turn off heat.
Put curry over brown rice and add your favorite toppings! (options listed below)

Lime Juice
