White Bean Hummus
I love love LOVE this recipe!!
I am a big hummus girl and usually make my hummus with chick peas like most classic hummus recipes call for.
I created this recipe while I was visiting home and my parents literally had a plethora of cannellini beans. We were getting ready to go camping and I wanted to make something we could snack on for a couple days that would last in the cooler. Thus, the cannellini hummus was born!
Cannaini beans are also known as a type of white bean. They are high in protein and an excellent source of fiber, iron, magnesium, and folate!
These beans make for a rich and creamy spread that is perfect for snacking and layering on sandwiches. It is a great way to get your protein and nutrients without breaking the bank.

Ingredients:
2 15 oz cans cannellini beans rinsed
3-5 garlic cloves chopped
Lemon juice about 1/4 cup
1-1 1/2 tsp Salt
2 tbs olive oil
1/2 tsp black pepper
1/2 tsp cumin
Directions:
Throw all ingredients into a food processor or blender and blend until smooth and creamy, it is that simple!
I included salt and pepper measurements but I usually tell people to season to your own liking :)
Store in an airtight container for best storage, and enjoy!
