Banana Bread Mug Cake

I am very proud of this recipe! Did I mention it is vegan? Though it is simple, it is delicious and only 3 minutes to make! I was looking for a comfort food to make quickly while still being healthy and came up with this gem. I have never understood the mug cake trend until this moment. There are so many possibilities! This is definently not the last mug cake recipe you will see on this website. Stay tuned!
I have included peanut butter in this recipe to create a cake like consistency while being low-carb. You are free to use any nut butter of your choice, and get creative! Send me your masterpieces!
Ingredients:
1/2 large banana mashed
2 tbs peanut butter
1 1/2 tbs flour
1/2 tsp cinnamon
Dash of salt
1/2 tsp vanilla
1/2 tsp baking soda
2 tbs walnuts
2 tbs chocolate chips
1/2 tsp chia seeds (optional)
Directions:
In microwave safe mug mash banana with fork. Once creamy add in nut butter, flour, salt, cinnamon, vanilla, chia seeds, and baking soda. Mix well, and then add your walnuts and chocolate chips.
Place in microwave and cook for 1 1/2 - 2 minutes, depending on your microwave. I usually check every 30 seconds to ensure I don’t overcook it!
